Roasted Carrots with Greek Yogurt Cucumber Dip:
1 tsp honey
1 tsp olive oil
½ tsp smoked paprika
Pinch of cayenne pepper
Salt and black pepper, to taste
For the dip:
¼ cup finely chopped cucumber
1 tsp honey
Juice of ½ lemon
Pinch of garlic powder
Tajín seasoning, to taste
Preheat oven to 400°F (or air fryer to 375°F).
In a bowl, toss carrot sticks with olive oil, honey, smoked paprika, cayenne, salt, and pepper until evenly coated.
Spread on a baking sheet (or place in air fryer basket) in a single layer.
Roast for 20–25 minutes in the oven, or 15–18 minutes in the air fryer, until tender and lightly caramelized.
Make the dip:
In a small bowl, stir together Greek yogurt, cucumber, honey, lemon juice, garlic powder, and a sprinkle of Tajín. Adjust seasoning to taste.
Serve: Plate the roasted carrots warm and serve with the cool cucumber-yogurt dip on the side.
