Oh my Okra!
Before starting on my Trim Healthy Mama journey, I would never even have DREAMED of eating Okra, let alone even know it existed!

It's such a strange, exotic-looking vegetable, and it just LOOKS like it will taste bad!
Okay, to be honest, this one DOES look cute, but the real-life version had me questioning whether or not I was THAT committed to having a healthy lifestyle.

But boy was I wrong!

What IS Okra exactly?

Okra is a flowering plant with edible seed pods and it comes from warm climates like Africa and Asia.
Okra can sometimes be referred to as "lady fingers". 

Okra is super rich in nutrients, especially Vitamin C and K1!
Okra is low in calories and carbs, but it does contain protein and fiber, which makes it different from most fruits and veggies. This makes it SUPER slimming!

Okra contains antioxidants, which defend the body against free radicals. It also helps protect the brain from inflammation.

There have been studies to show that Okra may lower the risk of heart disease and may have anti-cancer properties as well.

Okra also contains Vitamin B9, which is great for pregnant mamas!

Okra also has amazing benefits for your skin!

With all these benefits, I think I want to eat Okra every day, that is why in the THM world, you'll see ladies doing Okra challenges.  It really is so beneficial for healing and for slimming your waistline! 


But how do you even cook this strange-looking veggie? How do I use it?

Here are some great ideas on how to hide Okra into your daily eating plan:

Peanutty, Chocolaty, Banana-y Secret Shake - Biggie Shake (E)
 This shake has a great taste and you can't detect the okra in it.
The key to putting Okra in shakes is using a great mixer like the Vitamixer and blending it a lot!

Queso Chicken Bake (E)
This is my favorite casserole using okra where you can't detect it!
It's a firm favorite in my home.

Fuel Pull Air Fried Okra
Season with Smoked Paprika, Nutritional Yeast, and Onion Powder.
I air fry mine at 350 degrees for 15 min, stirring halfway.
Bump the temp up to 375 - 400 degrees for a few more minutes to get it a little crispy.



Chocolate Moisties Dessert
What? a vegetable in a dessert? You read that right!
