Kefir
What is Kefir?
  It's a fermented milk drink that is a little tangy.
 It's like a drinkable yogurt.
It's an amazing probiotic that works on your gut health.
It's a great source of vitamins and minerals.

Kefir has been around forever and was used as a way to preserve milk before there was refrigeration.  The good bacteria helps kill any bad bacteria in the milk and eats up all the milk sugars making it have high qualities of good bacteria.  
Kefir does the same thing to your gut, so kefir is your answer to any gut issues you may have!

What are the benefits of Kefir?Kefir is full of tryptophan, which is why it helps you sleep better!  Kefir also helps with anxiety because serotonin is made in the gut and sent to the brain.  Kefir heals the gut, so your serotonin levels will also balance.

Another favorite of kefir is the skin benefits! Let's look at those!

Where do I get kefir?
You can purchase unsweetened, plain kefir from the store.  Our store carries the Lifeway brand.  It looks like this:

As you can see, store-bought is an E or XO on the TH plan.  It's better to have store-bought kefir than not have kefir at all in your diet, but I highly encourage making your own kefir because it has 50 microbe strains versus the 3-4 in store-bought kefir.  The homemade is way more nourishing and a whole lot tastier!
  Really, there is no comparison between the two.

I have good news, making your own kefir is cheaper and not hard or time consuming!

What do you need?
You will also need glass jars, lids, a small holed strainer and a wooden spoon.

Let's unbox my very healthy kefir grains from Cultured Food Life.

Kefir grains look kind of like cottage cheese.

The most complicated part of making homemade kefir is deciding what kind of milk you want to use.  First, you don't need to buy organic milk, as the grains will eat all the milk sugar and anything bad up.  In the videos above, when I first got my grains, I used whole milk or fresh milk directly from the farmer and that would be an S kefir, but now I buy 1% milk to make a Fuel Pull kefir, so I can chose a Fuel Pull, E or S kefir shake on TH plan.

Why Double Ferment?
Double fermenting  increases the nutrients and breaks carbs down even further and turns the kefir milk into a  FP.
Once it separates into curds and whey, it's a FP and all the lactose is eaten up.
Second-fermented kefir will have more nutrients and the vitamins will skyrocket and make it so much more superfoody!  This happens due to the prebiotics in the added fruits. When you add a new fuel source for the microbes in kefir, they begin to grow and multiply, which increases all the vitamins, especially the B vitamins. The taste is even better because it takes away the sourness and mellows out the flavors.

Cake Of Wonders

Are you the lady who grew up on store-bought boxed cake?  I sure was!  In fact, I was the one that stocked up the cupboards when they were on sale.  I actually didn't really eat the cake, but I enjoyed making it for others.    Now I share that making a cake from scratch in a healthy way to stabilize your blood sugar and give you a trim and healthy waistline is so much tastier and better for you.
 Ladies, if I can do this, you can, too!!

Let's start with Esther's Cake of Wonders from Trim Healthy Indulgence page 37.
Here is what the fish cake looked like.I frosted it with chocolate frosting and ran out of time before the birthday guy came home, so my husband decorated it for us!  As you can see, he used unsweetened coconut flakes and slivered almonds.
This is my oldest son, Cole. He loves to fish and has spent every birthday since five years old at trout camp fishing with all the guys in the family.  That is why I did a fish cake for him.  

The Cake of Wonders is a fantastic cake!  You wouldn't know it was healthy!

 I was looking back over the years and realized that I have made quite a few Trim Healthy cakes over the years.  I started feeding my oldest son healthy when he was three years old in 2006. His first few Trim Healthy cakes were Special Occasion Chocolate Cake from the first book on page 309 and the Trimtastic Cake from the cookbook. 
 Let's walk down memory lane and give you some birthday boy inspiration!!
I've had four May birthdays, 
so here is a Trim Healthy Cake for my middle son back in 2013.
 I hope this inspires you to stay on plan during a special occasion. You can live life with happy, healthy celebrations!

  We visited our first one in Texas in 2017 and never forgot the experience.
We found a brand-new one in Alabama and Kentucky and had to stop!

Coconut Cake

Coconut Cake
Let's talk about Coconut Cake!

I made the Coconut Cake from Trim Healthy Indulgence for my mother for her surprise 80th Birthday Party.  She was a music teacher and still loves music and playing the piano, so she is still giving piano lessons at 80 years young.  

My mother, Donalyn, has been eating healthily for 17 years, but it's only been a couple of years since she started eating the Trim Healthy Mama way because she saw how much THM benefited me.  

I made her a Trim Healthy Mama cake in the shape of a grand piano, homemade vanilla ice cream, and THM chocolate syrup.

Give me all the details!

Here is the cake in the shape of a grand piano:

Step 1 - Batter
Watch this video as I start whipping up the cake batter:

Here are what the piano cake pans look like.  I've had mine for 30 years!

Step 2 - Heating the Oil
Next, let's put the cup of coconut oil in the pans in the oven as it's heating up.

Melting the coconut oil in the pan and then swishing it around to reach the edges really helps the cake from sticking.  After coating the pan with oil, I poured the coconut oil into the mixer with the rest of the ingredients.

Step 3 - Batter into Pans
Let's put the batter into the pan now.

I filled three cupcakes with the leftover batter, placed them in the oven at 350 degrees, and set the time for 30 minutes.

Step 4 - Cooling
I poked the cake with a toothpick after 30 minutes to see if it was done and it was!  I pulled the cake out of the oven and tipped it upside down onto a pampered chef pad.  I let it cool for about 30 minutes and then this happened:

Step 5 - Assembling and Frosting
As the cakes cool, I made the Russian Buttercream Frosting,
 page 225, from Trim Healthy Indulgence.

Now, let's assemble the cake.  Here are my 30-year-old piano cake decorations:

I took a large spatula and put it under the largest piano cake to lift it onto the piano pedestal. Then I added the frosting.


Now it's time to frost the smaller layer of the piano cake and add it on top of the bottom layer. I added the final decorations and Presto! it's done!


Here are my mother and I with the Coconut Piano Cake:

My mom loved the piano cake and so did all the guests!  It wasn't that hard to do, it was delicious and healthy, and the guests loved it!

Here is how I ate the leftovers the next morning:

I love having dessert for breakfast with a THM sipper.
I had leftover THM Cranberry Wassail with it.

I put the leftovers cut into individual serving sizes and put them in a glass pan in my freezer for a day that I need dessert. You could wrap them in parchment paper first. 
 I don't use aluminum foil or plastic containers, so toxins don't leach into my healthy food and get in my body.

Meet Charity L Ingleright

As my precious gift from God, a three-week-old baby, was burning up and struggling to breath, I was at my breaking point.  I didn’t want this life for my infant, one that I remember so well growing up. All the missed events because I didn’t feel well.  I was always struggling with allergies, low energy, migraines, sickness, and I didn’t want that life for my children.  I had accepted the lie that it was normal to feel that way, but I wanted to take a stand for my baby.  How in the world could my three-week-old child be sick already?  I made an appointment with a holistic doctor for the first time and that moment changed my life forever.  My eyes were opened to a whole new revelation that I had never heard of before.                       FOOD IS MEDICINE!  She taught me all about food.  What you eat affects how you feel.  I came home and cleaned house, meaning out with the old and in with the new.  It was a very dramatic, but exciting time to find hope for all my struggles. I was willing to give it a try for my family.  It was one of the most rewarding and life-changing things I have ever done for me and for those who called me mother.
